Description

Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 325°F.
  2. Season the chuck roast with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove the roast and set aside.
  6. Add chopped onion and garlic to the pot; sauté until softened.
  7. Add carrots and potatoes, stirring to combine.
  8. Return the roast to the pot.
  9. Pour in beef broth and Worcestershire sauce.
  10. Add thyme and rosemary.
  11. Cover and place in the oven.
  12. Cook for 3 to 4 hours, until the roast is tender.
