Description
A flavorful and tender chuck roast cooked in a Dutch oven.
Ingredients

- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 325°F.
- Season the chuck roast with salt and pepper.
- Heat olive oil in a Dutch oven over medium-high heat.
- Sear the roast on all sides until browned.
- Remove the roast and set aside.
- Add chopped onion and garlic to the pot; sauté until softened.
- Add carrots and potatoes, stirring to combine.
- Return the roast to the pot.
- Pour in beef broth and Worcestershire sauce.
- Add thyme and rosemary.
- Cover and place in the oven.
- Cook for 3 to 4 hours, until the roast is tender.

- Adjust seasoning according to taste.
- You can add other vegetables as desired.
