Kuku Paka is a creamy East African chicken curry made with coconut milk, tender chicken, and fragrant spices. It’s a comforting dish with rich flavors.
Ingredients

- 1 kg chicken, cut into pieces
- 2 tbsp vegetable oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 can (400 ml) coconut milk
- 2 tomatoes, chopped
- 1 green chili, sliced (optional)
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Add onions and sauté until soft and golden.
- Stir in garlic, ginger, and green chili. Cook for 1-2 minutes.
- Add curry powder, turmeric, cumin, and coriander. Mix well.
- Add chicken pieces and coat them in the spice mixture. Cook for 5 minutes.
- Pour in coconut milk and add chopped tomatoes. Stir to combine.
- Cover and simmer for 25-30 minutes until chicken is tender.
- Adjust salt to taste and garnish with fresh cilantro before serving.
Notes
- For a thicker sauce, simmer uncovered for a few extra minutes.
- Adjust chili according to your spice preference.
- Serve with rice or chapati.
