Instructions
- Preheat the oven to 350°F (175°C).

- Place the lamb in a roasting pan and roast for 1.5 to 2 hours.
- Cook quinoa according to package instructions using vegetable broth.
- Steam or roast spring vegetables until tender.
- Let the lamb rest for 15 minutes before carving.
- Serve lamb with quinoa and vegetables.
