Instructions

- Place the lamb in a roasting pan.
- Prepare the vegetables and arrange around the lamb.
- Squeeze lemon juice over the lamb and vegetables.
- Roast for about 1.5 hours or until the lamb is cooked through.
- Let the lamb rest before carving.
- Serve with the roasted vegetables.
