- 1 lb chicken breast, diced
- 3 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes.
- Stir in onion, garlic, and bell pepper. Cook for 3-4 minutes.
- Add arborio rice and stir for 1 minute.
- Pour in chicken broth gradually, stirring frequently until rice is tender (about 18-20 minutes).
- Mix in Parmesan cheese, salt, pepper, and basil.
- Serve hot.
