This easy buckeyes recipe gives you sweet, chocolate-covered peanut butter balls.
Ingredients

- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix peanut butter and softened butter until smooth.
- Add powdered sugar and vanilla extract, then mix until combined.
- Form small balls and place them on a baking sheet.
- Chill the balls in the refrigerator for 30 minutes.
- Melt chocolate chips and vegetable oil in a microwave or double boiler.
- Dip each peanut butter ball into the melted chocolate, covering it completely.
- Return the dipped balls to the baking sheet and let them set until the chocolate hardens.
Notes
- Store in an airtight container.
- Use a toothpick for easier dipping.
- Optionally, sprinkle with sea salt before the chocolate sets.
