- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Season the chicken breasts with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5-6 minutes per side until browned. Remove and set aside.
- In the same skillet, add onion, bell pepper, and garlic. Sauté for 3-4 minutes until softened.
- Add the rice and stir to coat with the vegetables. Pour in the chicken broth and bring to a boil.
- Return the chicken to the skillet, reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the chicken is tender.
- Garnish with fresh parsley if desired and serve hot.
Notes
- Adjust the amount of Cajun seasoning to suit your spice preference.
- Use brown rice instead of white for a healthier option, but increase the cooking time as needed.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
