- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup onions, chopped
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 1 cup cooked rice or pasta (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, carrots, celery, and onions.
- Stir in cream of chicken soup, sour cream, chicken broth, garlic powder, salt, and pepper.
- Add cooked rice or pasta if using, then mix well.
- Transfer mixture to a greased casserole dish.
- Sprinkle shredded cheddar cheese on top.
- Bake for 25-30 minutes or until bubbly and golden brown.
- Let cool for 5 minutes before serving.
Notes
- Use leftover rotisserie chicken for easy prep.
- Swap sour cream with Greek yogurt for a lighter version.
- Freeze leftovers for up to 3 months.
