Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 lemon, juiced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Bring water or chicken broth to a boil in a saucepan.
  2. Stir in couscous, cover, and remove from heat. Let sit for 5 minutes.
  3. Fluff couscous with a fork and let it cool.
  4. In a large bowl, combine cooked couscous, chicken, cucumber, bell pepper, red onion, and parsley.
  5. Drizzle with olive oil and lemon juice. Add salt and black pepper.
  6. Toss gently to combine all ingredients.
  7. Serve chilled or at room temperature.
