A simple and flavorful chicken couscous salad perfect for quick meals or meal prep.
Ingredients

- 1 cup couscous
- 1.5 cups water or chicken broth
- 2 cups cooked chicken, shredded or diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Bring water or chicken broth to a boil in a saucepan.
- Stir in couscous, cover, and remove from heat. Let sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- In a large bowl, combine cooked couscous, chicken, cucumber, bell pepper, red onion, and parsley.
- Drizzle with olive oil and lemon juice. Add salt and black pepper.
- Toss gently to combine all ingredients.
- Serve chilled or at room temperature.
Notes
- Use leftover rotisserie chicken for convenience.
- Add crumbled feta cheese for extra flavor.
- Store in an airtight container for up to 3 days.
