Ingredients

- 1 lb boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp butter
Instructions
- In a large pot, cook chicken breasts in broth until tender.
- Remove chicken, shred, and set aside.
- Add carrots, celery, onion, garlic, thyme, salt, and pepper to the broth.
- Simmer until vegetables are tender.
- Mix flour, baking powder, salt, milk, and butter to form dumpling dough.
- Drop spoonfuls of dough into simmering broth.
- Cover and cook for 15 minutes.
- Return shredded chicken to the pot.
- Serve hot.
Notes
- Use rotisserie chicken for quicker prep.
- Add peas or corn for extra vegetables.
- Store leftovers in the fridge for up to 3 days.
