Description
Chicken enchiladas are a delicious and comforting dish. Tender shredded chicken is wrapped in tortillas, topped with sauce and cheese, then baked until bubbly.

- 2 cups shredded cooked chicken
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 cup sour cream
- 1 tbsp taco seasoning
- 1 tbsp vegetable oil
Instructions
- Preheat oven to 350°F (175°C)
- Mix chicken, sour cream, taco seasoning, and half the cheese in a bowl
- Fill each tortilla with chicken mixture and roll up
- Place enchiladas seam-side down in baking dish
- Pour enchilada sauce over top and sprinkle with remaining cheese
- Bake for 20 minutes until cheese melts
Notes
- Use rotisserie chicken for easy prep
- Corn tortillas work too but may crack
- Add jalapeños for extra spice
- Let sit 5 minutes before serving
