Description

Chicken enchiladas are a delicious and comforting dish. Tender shredded chicken is wrapped in tortillas, topped with sauce and cheese, then baked until bubbly.


Ingredients

  • 2 cups shredded cooked chicken
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheese
  • 1/2 cup diced onion
  • 1/2 cup sour cream
  • 1 tbsp taco seasoning
  • 1 tbsp vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C)
  2. Mix chicken, sour cream, taco seasoning, and half the cheese in a bowl
  3. Fill each tortilla with chicken mixture and roll up
  4. Place enchiladas seam-side down in baking dish
  5. Pour enchilada sauce over top and sprinkle with remaining cheese
  6. Bake for 20 minutes until cheese melts

Notes

  • Use rotisserie chicken for easy prep
  • Corn tortillas work too but may crack
  • Add jalapeños for extra spice
  • Let sit 5 minutes before serving
