- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 8 ounces mushrooms, sliced
- 1/2 cup Marsala wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Pound chicken breasts to 1/2-inch thickness.
- Mix flour, salt, and pepper in a shallow dish.
- Dredge chicken in flour mixture.
- Heat olive oil and 1 tablespoon butter in a skillet.
- Cook chicken for 5 minutes per side, then remove.
- Add remaining butter and mushrooms to skillet.
- Sauté mushrooms for 5 minutes.
- Pour in Marsala wine and chicken broth.
- Simmer for 3 minutes.
- Stir in heavy cream.
- Return chicken to skillet and cook for 2 minutes.
- Sprinkle with parsley before serving.
Notes
- Use dry Marsala wine for best flavor.
- Serve over pasta or mashed potatoes.
- Chicken can be substituted with turkey cutlets.
