Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 lb chicken breast, cubed
- 8 cups chicken broth
- 2 cups egg noodles
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Add garlic and cook for 1 minute.
- Add chicken and cook until no longer pink, about 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add egg noodles, salt, pepper, and thyme. Cook for 10 minutes until noodles are tender.
- Stir in fresh parsley before serving.
Notes
- Use shredded rotisserie chicken for a quicker option.
- Store leftovers in the fridge for up to 3 days.
- Add a squeeze of lemon for extra flavor.
