Description
A quick and delicious pasta salad with chicken, pesto, and fresh vegetables.
Ingredients

- 2 cups cooked chicken, cubed
- 8 oz pasta, cooked and cooled
- 1/2 cup pesto sauce
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, and red onion.
- Add pesto, lemon juice, salt, and black pepper. Toss well to coat.
- Top with crumbled feta cheese if desired.
- Refrigerate for at least 30 minutes before serving.
Notes
- You can use store-bought or homemade pesto.
- For extra flavor, grill the chicken before adding it to the salad.
- This salad can be stored in the fridge for up to 3 days.
