Description

A quick and delicious pasta salad with chicken, pesto, and fresh vegetables.


Ingredients

  • 2 cups cooked chicken, cubed
  • 8 oz pasta, cooked and cooled
  • 1/2 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Cook pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, and red onion.
  3. Add pesto, lemon juice, salt, and black pepper. Toss well to coat.
  4. Top with crumbled feta cheese if desired.
  5. Refrigerate for at least 30 minutes before serving.

Notes

  • You can use store-bought or homemade pesto.
