Ingredients

- 2 cups cooked chicken, shredded
- 1 cup carrots, diced
- 1 cup peas
- 1/2 cup celery, chopped
- 1/3 cup butter
- 1/3 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 (9-inch) unbaked pie crust
Instructions
- Preheat oven to 425°F.
- In a saucepan, melt butter over medium heat. Stir in flour, salt, and pepper.
- Gradually whisk in chicken broth and milk. Cook until thick.
- Add chicken and vegetables. Stir well.
- Pour mixture into pie crust. Cover with top crust.
- Cut slits in the top crust to vent. Bake for 30-35 minutes.
Notes
- Use leftover rotisserie chicken.
- Add thyme or parsley for extra flavor.
- Let cool slightly before serving.
