A simple and delicious recipe for chicken quesadillas.
Ingredients

- 2 cups cooked chicken, shredded
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 bell pepper, sliced
- 1 small onion, sliced
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pan over medium heat.
- Add bell pepper and onion. Cook until soft.
- Add shredded chicken, cumin, paprika, and salt. Stir well.
- Place a tortilla on a clean surface. Sprinkle cheese on half.
- Add chicken mixture on top of cheese.
- Fold tortilla in half.
- Cook in a pan over medium heat until golden brown on both sides.
- Cut into wedges and serve.
Notes
- Use pre-cooked chicken for faster prep.
- Customize with jalapeños or tomatoes.
- Serve with sour cream or salsa.
