Description

A simple and delicious recipe for chicken quesadillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 bell pepper, sliced
  • 1 small onion, sliced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add bell pepper and onion. Cook until soft.
  3. Add shredded chicken, cumin, paprika, and salt. Stir well.
  4. Place a tortilla on a clean surface. Sprinkle cheese on half.
  5. Add chicken mixture on top of cheese.
  6. Fold tortilla in half.
  7. Cook in a pan over medium heat until golden brown on both sides.
  8. Cut into wedges and serve.

  • Use pre-cooked chicken for faster prep.
  • Customize with jalapeños or tomatoes.
