- 2 cups cooked chicken, shredded
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp chili powder
- 1/2 cup spicy salsa
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers. Cook for 2 minutes.
- Add shredded chicken, salt, black pepper, and chili powder. Mix well.
- Place a tortilla in the pan and sprinkle half with cheese.
- Add the chicken mixture on top of the cheese.
- Fold the tortilla in half and press lightly.
- Cook for 2 minutes on each side until golden and crispy.
- Repeat with remaining tortillas.
- Serve hot with spicy salsa.
Notes
- Use pre-cooked chicken for faster preparation.
- Adjust the spice level by adding more or less chili powder.
- For extra crunch, toast the quesadillas in a sandwich press.
