Ingredients

  • 1 whole chicken (about 34 lbs)
  • 8 cups water
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Place chicken in a large pot and add water. Bring to a boil.
  2. Add onion, carrots, celery, garlic, salt, pepper, and bay leaves.
  3. Reduce heat to low and simmer for 1 hour, skimming foam as needed.
  4. Remove chicken, shred the meat, and return it to the pot.
  5. Discard bones and bay leaves.
  6. Stir in parsley and serve hot.
