- 1 whole chicken (about 3–4 lbs)
- 8 cups water
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- 1 tbsp fresh parsley, chopped
Instructions
- Place chicken in a large pot and add water. Bring to a boil.
- Add onion, carrots, celery, garlic, salt, pepper, and bay leaves.
- Reduce heat to low and simmer for 1 hour, skimming foam as needed.
- Remove chicken, shred the meat, and return it to the pot.
- Discard bones and bay leaves.
- Stir in parsley and serve hot.
