Ingredients

  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1/2 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1/2 cup shredded cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Rub chicken with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
  3. Grill chicken for 6-7 minutes per side or until fully cooked. Let rest, then slice thinly.
  4. Warm tortillas on the grill for 30 seconds per side.
  5. Spread chipotle ranch dressing on each tortilla.
  6. Layer rice, black beans, grilled chicken, cheese, tomatoes, and cilantro.
  7. Fold tortilla sides inward, then roll tightly to form a burrito.
  8. Serve immediately or wrap in foil for storage.
