- 4 oz dark chocolate (70% cocoa)
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1/4 cup all-purpose flour
- Pinch of salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 425°F (220°C). Grease and flour four 6-ounce ramekins.
- Melt the dark chocolate and butter together in a double boiler or microwave, stirring until smooth.
- In a separate bowl, whisk together sugar, eggs, egg yolks, and vanilla until pale and slightly thickened.
- Gently fold the melted chocolate mixture into the egg mixture.
- Sift in the flour and salt, then stir until just combined.
- Divide the batter evenly among the prepared ramekins.
- Bake for 12-14 minutes, until the edges are set but the center is still soft.
- Let cool for 1 minute, then invert onto plates and serve immediately.
Notes
- Do not overbake—the center should remain molten.
- Serve with vanilla ice cream or fresh berries for contrast.
- Can be made ahead and refrigerated; bake just before serving.
