- 4 salmon fillets
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese
- Fresh basil, for garnish
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and cook for 4-5 minutes, until crispy. Flip and cook for another 3-4 minutes or until cooked through. Remove the salmon from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
- Add the sun-dried tomatoes and red pepper flakes (if using), and let simmer for 2-3 minutes until the sauce thickens slightly.
- Stir in the spinach and cook until wilted.
- Mix in the Parmesan cheese and stir until melted and combined.
- Return the salmon to the skillet to coat in the sauce and heat through for about 1-2 minutes.
- Serve immediately, garnished with fresh basil.
