Ingredients

  • 4 salmon fillets
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down and cook for 4-5 minutes, until crispy. Flip and cook for another 3-4 minutes or until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer.
  5. Add the sun-dried tomatoes and red pepper flakes (if using), and let simmer for 2-3 minutes until the sauce thickens slightly.
  6. Stir in the spinach and cook until wilted.
  7. Mix in the Parmesan cheese and stir until melted and combined.
  8. Return the salmon to the skillet to coat in the sauce and heat through for about 1-2 minutes.
  9. Serve immediately, garnished with fresh basil.
