- 2 lbs boneless, skinless chicken thighs
- 4 carrots, chopped
- 3 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Place chicken, carrots, celery, onion, and garlic in the crockpot.
- Add chicken broth, thyme, rosemary, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- If desired, mix cornstarch and water in a small bowl, then stir into the stew to thicken. Cook for an additional 15 minutes.
- Serve hot.
Notes
- You can use chicken breasts if you prefer, but thighs stay juicier.
- Add potatoes or other vegetables if you like.
- Store leftovers in the fridge for up to 3 days.
