Description
A simple and hearty stew made with meatballs and vegetables cooked in a crockpot.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, diced
- 2 carrots, sliced
- 2 potatoes, cubed
- 4 cups beef broth
- 1 can diced tomatoes
- 1 tsp dried thyme
Instructions
- Mix ground beef, breadcrumbs, egg, salt, and pepper in a bowl.
- Shape into small meatballs.
- Place meatballs, onion, carrots, and potatoes in the crockpot.
- Pour beef broth and diced tomatoes over the ingredients.
- Add thyme and stir gently.
- Cook on low for 6 hours or high for 3 hours.
- Serve warm.
Notes
- You can use ground turkey instead of beef.
- Add more vegetables if preferred.
- Store leftovers in the fridge for up to 3 days.
