Description

A simple and hearty stew made with meatballs and vegetables cooked in a crockpot.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme

Instructions

  1. Mix ground beef, breadcrumbs, egg, salt, and pepper in a bowl.
  2. Shape into small meatballs.
  3. Place meatballs, onion, carrots, and potatoes in the crockpot.
  4. Pour beef broth and diced tomatoes over the ingredients.
  5. Add thyme and stir gently.
  6. Cook on low for 6 hours or high for 3 hours.
  7. Serve warm.

Notes

  • You can use ground turkey instead of beef.
  • Add more vegetables if preferred.
  • Store leftovers in the fridge for up to 3 days.
