A simple and flavorful Southwest-inspired soup made in a crockpot for easy preparation.
Ingredients

- 1 lb ground turkey or chicken
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 small onion, diced
- 1 bell pepper, diced
- 3 cups chicken broth
- 1 tbsp taco seasoning
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Instructions
- Brown the ground turkey or chicken in a skillet over medium heat. Drain excess fat.
- Combine all ingredients in the crockpot.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Stir before serving and add optional toppings if desired.
Notes
- Use lean ground turkey or chicken for a lower-fat option.
- Adjust the spice level by adding more or less chili powder.
- This soup freezes well for later meals.
