Ingredients

  • 1 lb ground turkey or chicken
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 3 cups chicken broth
  • 1 tbsp taco seasoning
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

Instructions

  1. Brown the ground turkey or chicken in a skillet over medium heat. Drain excess fat.
  2. Combine all ingredients in the crockpot.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Stir before serving and add optional toppings if desired.
