Ingredients

- 2 cups of brown rice
- 1 lb chicken breast, diced
- 1 cup broccoli, chopped
- 1 cup bell peppers, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix chicken with olive oil, garlic powder, paprika, salt, and pepper.
- Spread chicken on a baking sheet.
- Add broccoli and bell peppers to the baking sheet.
- Bake for 20-25 minutes until chicken is cooked through.
- Meanwhile, cook brown rice according to package instructions.
- Once cooked, divide rice into meal prep containers.
- Top rice with chicken and vegetables.
- Let cool before sealing containers.
Notes
- Store in the refrigerator for up to 4 days.
- Reheat in the microwave before serving.
- You can swap vegetables based on preference.
