A quick and simple vegetarian dinner recipe that is both satisfying and nutritious.
Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 avocado, sliced
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and cover. Simmer for 15 minutes.
- In a large bowl, mix black beans, corn, bell pepper, cumin, chili powder, and salt.
- Once quinoa is cooked, fluff with a fork and add to the bowl.
- Toss to combine all ingredients.
- Serve topped with avocado and cilantro.
Notes
- Feel free to add other vegetables.
- This dish can be served warm or cold.
- Leftovers store well in the fridge.
