Description

A quick and simple vegetarian dinner recipe that is both satisfying and nutritious.


Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, rinsed
  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 avocado, sliced
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and cover. Simmer for 15 minutes.
  4. In a large bowl, mix black beans, corn, bell pepper, cumin, chili powder, and salt.
  5. Once quinoa is cooked, fluff with a fork and add to the bowl.
  6. Toss to combine all ingredients.
  7. Serve topped with avocado and cilantro.
