Ingredients

  • 1 lb chicken breast, cubed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Cajun seasoning
  • 1 bunch broccolini, trimmed

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken cubes, garlic, salt, and pepper. Cook until golden.
  3. Stir in parmesan and set chicken aside.
  4. In the same skillet, add heavy cream, sun-dried tomatoes, and Cajun seasoning. Simmer for 5 minutes.
  5. Char broccolini in a separate pan with a bit of oil until tender.
  6. Serve chicken with sauce and broccolini.
