A hearty and comforting soup made with ham and potatoes.
Ingredients

- 2 cups diced ham
- 4 medium potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add diced ham and cook for 2 minutes.
- Stir in potatoes, chicken broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 15 minutes or until potatoes are tender.
- Stir in milk and heat through.
- Serve hot.
Notes
- Use leftover ham for best flavor.
- Add more broth if you prefer a thinner soup.
- Top with shredded cheese or green onions if desired.
