Description

A comforting twist on classic lasagna, this soup combines rich flavors with easy preparation.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 28 oz canned crushed tomatoes
  • 6 cups chicken broth
  • 2 tsp Italian seasoning
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Add onion and garlic, cook until softened.
  3. Stir in crushed tomatoes, chicken broth, and Italian seasoning.
  4. Bring to a boil, then add broken lasagna noodles.
  5. Simmer for 15 minutes or until noodles are tender.
  6. Serve hot with dollops of ricotta and sprinkled with parmesan and mozzarella.
