Ingredients

- 4 cups stale bread, cubed
- 3 large tomatoes, chopped
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
Instructions
- Tear or cut the bread into bite-sized cubes.
- Combine bread, tomatoes, cucumber, red onion, and basil in a large bowl.
- Whisk together olive oil, vinegar, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Let sit for 10 minutes before serving.
