- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp thyme
Instructions
- Melt butter in a large pot over medium heat.
- Add onion and garlic, cook until soft.
- Add potatoes, broth, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use a blender or masher to puree the soup.
- Stir in milk and heat through.
- Serve hot.

- You can add cheese or bacon for extra flavor.
