- 2 cups Sugar
- 1/2 cup ml Light corn syrup
- 3/4 cup ml Water
- 1/2 teaspoon Red gel food coloring
- 1/2 teaspoon Cinnamon extract (optional)
- 6 Medium apples
- 6 Wooden sticks
- to taste Non-stick cooking spray
- 1 sheet Parchment paper
Instructions
- Set up your workspace: line a baking sheet with parchment paper and coat it with non-stick cooking spray. Prepare your apples with sticks.
- Remove wax from apples by dipping in boiling water for 5 seconds and scrubbing dry.
- In a saucepan, combine sugar, corn syrup, and water; stir just until moistened. Clip a candy thermometer to the pan.
- Bring to a rolling boil without stirring. Wipe down any sugar crystals from the sides of the pan with a wet pastry brush.
- Boil until the thermometer reads between 300°F and 310°F (149°C–154°C). This takes about 15-20 minutes.
- Once at temperature, remove from heat, stir in food coloring and cinnamon extract, and allow bubbles to settle for 1-2 minutes.
- Dip each apple into the syrup, coating evenly, and place on the prepared baking sheet to cool completely for at least 20 minutes.
Notes
- If coating is sticky or chewy, the syrup didn’t reach the hard crack stage.
- Wait for bubbles to settle before dipping to avoid a cloudy finish.
- Store at room temperature and consume within 1-2 days for best texture.
- Best made on cool, dry days to prevent tacky coating.
