- 1 pound of chicken breast, diced
- 2 cups of mixed vegetables (bell peppers, broccoli, carrots)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 teaspoon of Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute.
- Add diced chicken breast and cook until browned, about 5-7 minutes.
- Add mixed vegetables, salt, pepper, and Italian seasoning.
- Stir and cook for an additional 5-7 minutes until vegetables are tender.
- Serve hot.
Notes
- Use any vegetables you have on hand.
- For a spicy kick, add red pepper flakes.
- Serve with rice or pasta for a complete meal.
