- 2 cups cooked rice
- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for another 5 minutes.
- In a large bowl, combine the cooked rice and the meat mixture. Mix well and season with salt and pepper to taste.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Cover the dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes or until heated through and cheese is melted.
- Let cool slightly before serving. Garnish with chopped cilantro if desired.
Notes
- This meal can be stored in an airtight container in the refrigerator for up to 4 days.
- To reheat, simply microwave individual portions for 1-2 minutes or until heated through.
