Ingredients

  • 2 cups cooked rice
  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
  2. Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and cook for another 5 minutes.
  3. In a large bowl, combine the cooked rice and the meat mixture. Mix well and season with salt and pepper to taste.
  4. Transfer the mixture to a baking dish and top with shredded cheese.
  5. Cover the dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 20 minutes or until heated through and cheese is melted.
  6. Let cool slightly before serving. Garnish with chopped cilantro if desired.
