A simple and festive dinner for Saint Patrick’s Day.
Ingredients

- 1.5 lbs corned beef
- 4 cups water
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, quartered
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 cabbage, cut into wedges
Instructions
- Place the corned beef in a large pot.
- Add water, onion, carrots, potatoes, mustard seeds, and peppercorns.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add cabbage and cook for an additional 30 minutes.
- Remove meat and vegetables, slice, and serve.
Notes
- Serve with Irish soda bread.
- Leftovers can be used for sandwiches.
