Ingredients

- 8 oz pasta (penne or fettuccine)
- 2 tbsp olive oil
- 2 cups sliced mushrooms
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions, then drain.
- Heat olive oil in a pan over medium heat.
- Add mushrooms and cook until softened (5 minutes).
- Stir in garlic and red pepper flakes, cook for 1 minute.
- Add spinach and cook until wilted (2 minutes).
- Toss in cooked pasta and Parmesan cheese.
- Season with salt and pepper.
- Serve warm.

- Substitute with gluten-free pasta if needed.
- Add grilled chicken or shrimp for extra protein.
- Use baby spinach for a milder flavor.
