Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine quinoa, spinach, cherry tomatoes, and feta cheese.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the quinoa mixture and toss to coat.
- Transfer the mixture to a baking dish.
- Bake for 20 minutes until heated through and spinach is wilted.
Notes
- Feel free to add other vegetables.
- This dish can be served warm or cold.
- Store leftovers in the fridge for up to 3 days.
