Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Feta cheese for topping (optional)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.
  4. Preheat the grill to medium-high heat. Remove chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked.
  5. In a large bowl, combine cooked quinoa, cucumber, cherry tomatoes, red onion, and parsley. Toss to mix well.
  6. Serve grilled chicken over the quinoa salad and top with feta cheese if desired.
