Description

A refreshing summer salad packed with fresh vegetables and a light dressing.


Ingredients

  • 2 cups mixed greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Slice the cucumber and halve the cherry tomatoes.
  3. Thinly slice the red onion and dice the avocado.
  4. In a large bowl, combine greens, cucumber, tomatoes, onion, and avocado.
  5. Sprinkle crumbled feta cheese over the salad.
  6. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently.
  8. Serve immediately.
