A refreshing summer salad packed with fresh vegetables and a light dressing.
Ingredients

- 2 cups mixed greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens.
- Slice the cucumber and halve the cherry tomatoes.
- Thinly slice the red onion and dice the avocado.
- In a large bowl, combine greens, cucumber, tomatoes, onion, and avocado.
- Sprinkle crumbled feta cheese over the salad.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.
Notes
- For extra crunch, add toasted nuts or seeds.
- Store leftovers in an airtight container for up to one day.
- Replace feta with goat cheese for a different flavor.
