Ingredients

  • 1 lb boneless chicken breast, cut into cubes
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1/4 cup vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1/2 cup pineapple chunks
  • 1/2 cup ketchup
  • 1/4 cup vinegar
  • 1/4 cup brown sugar
  • 1 tbsp soy sauce
  • 1 tsp garlic powder

Instructions

  1. Preheat oil in a pan over medium heat.
  2. Coat chicken cubes in cornstarch, then dip in beaten eggs.
  3. Fry chicken until golden brown and cooked through.
  4. Remove chicken and set aside.
  5. In the same pan, sauté bell pepper and onion until soft.
  6. Add pineapple, ketchup, vinegar, brown sugar, soy sauce, and garlic powder.
  7. Stir until sauce thickens.
  8. Return chicken to the pan and coat evenly with sauce.
  9. Serve hot.
