Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pot, heat olive oil over medium heat.
  3. Add the onion and garlic, sauté until fragrant.
  4. Add the chicken thighs and brown on both sides.
  5. Stir in the carrots and potatoes.
  6. Pour in the chicken broth and add the thyme, rosemary, salt, and pepper.
  7. Cover and transfer to the oven.
  8. Bake for 45 minutes or until chicken is cooked through.
