Ingredients

  • 4 cups mixed winter greens (kale, spinach, arugula)
  • 1 cup roasted butternut squash, cubed
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup toasted walnuts
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Toss the butternut squash with 1 tbsp olive oil, salt, and pepper. Roast at 400°F for 20 minutes.
  3. Toast the walnuts in a dry pan over medium heat for 3-5 minutes.
  4. Whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper.
  5. Combine greens, roasted squash, pomegranate seeds, feta, and walnuts in a large bowl.
  6. Drizzle with dressing and toss gently.
  7. Serve immediately.

Notes

  • Swap feta for goat cheese if preferred.
  • Add roasted chicken for extra protein.
  • Store leftovers without dressing to keep greens fresh.
