Ingredients

  • 8 oz soba noodles or rice noodles
  • 1 cup shelled edamame (fresh or frozen)
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Cook the soba noodles according to package instructions. Drain and rinse under cold water, then set aside.
  2. In a large bowl, combine the cooked noodles, edamame, carrots, red bell pepper, green onions, and cilantro.
  3. In a small bowl, whisk together the sesame oil, soy sauce, grated ginger, rice vinegar, honey (or maple syrup), salt, and pepper.
