Ingredients

- 8 oz soba noodles or rice noodles
- 1 cup shelled edamame (fresh or frozen)
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 3 green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon ginger, grated
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- Cook the soba noodles according to package instructions. Drain and rinse under cold water, then set aside.
- In a large bowl, combine the cooked noodles, edamame, carrots, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the sesame oil, soy sauce, grated ginger, rice vinegar, honey (or maple syrup), salt, and pepper.
- Pour the dressing over the noodle salad and toss to coat evenly.
- Garnish with sesame seeds before serving.
Notes
- Feel free to add other vegetables or proteins such as grilled chicken or tofu.
- For extra flavor, let the salad sit for 10-15 minutes before serving to allow the noodles to absorb the dressing.
