A hearty and flavorful taco casserole that’s easy to make and perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  3. Add taco seasoning and water to the beef, simmer for 5 minutes.
  4. Layer half the tortilla chips in a baking dish.
  5. Spread the beef mixture over the chips.
  6. Top with black beans, corn, and half the cheese.
  7. Add remaining tortilla chips, then spread sour cream and salsa over the top.
  8. Sprinkle remaining cheese and green onions.
  9. Bake for 20 minutes or until cheese is melted and bubbly.

Notes

  • Use lean ground beef for less grease.
  • Substitute with ground turkey for a lighter option.
