Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C).
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add taco seasoning and water to the beef, simmer for 5 minutes.
- Layer half the tortilla chips in a baking dish.
- Spread the beef mixture over the chips.
- Top with black beans, corn, and half the cheese.
- Add remaining tortilla chips, then spread sour cream and salsa over the top.
- Sprinkle remaining cheese and green onions.
- Bake for 20 minutes or until cheese is melted and bubbly.
Notes
- Use lean ground beef for less grease.
- Substitute with ground turkey for a lighter option.
- Let casserole sit for 5 minutes before serving.
