A fresh and tasty fall salad with seasonal ingredients.
Ingredients

- 4 cups mixed greens
- 1 cup diced butternut squash
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20 minutes.
- In a bowl, whisk together remaining olive oil, balsamic vinegar, honey, salt, and pepper.
- Combine mixed greens, roasted squash, cranberries, pecans, and feta in a large bowl.
- Drizzle with dressing and toss gently.
- Serve immediately.
Notes
- Swap pecans for walnuts if preferred.
- Add grilled chicken for extra protein.
- Store dressing separately if making ahead.
