- 2 lbs of chicken thighs
- 1 cup of rice
- 4 cups of vegetable broth
- 1 onion, chopped

- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- In a large oven-safe pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add chicken thighs and brown on both sides.
- Stir in rice, vegetable broth, and mixed vegetables.
- Season with salt and pepper.
- Bring to a boil, then cover and transfer to the oven.
- Bake for 30-35 minutes or until chicken is cooked through and rice is tender.
- Remove from the oven and let it rest for a few minutes before serving.
