Ingredients

  • 100ml heavy cream
  • 50g unsalted butter
  • 3 large egg yolks
  • 50g granulated sugar
  • 1 teaspoon vanilla extract
  • A pinch of sea salt
  • Fresh berries, for garnish
  • Edible flowers, for garnish
  • Mint leaves, for garnish

Instructions

  1. Preheat your oven to 150°C (300°F).
  2. In a saucepan over low heat, combine the chopped dark chocolate, heavy cream, and unsalted butter. Stir until melted and smooth.
  3. In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and sea salt until well combined.
  4. Slowly pour the chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from cooking.
  5. Pour the mixture into four small ramekins and place them in a baking dish. Fill the baking dish with water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for 25-30 minutes or until set but still slightly wobbly in the center.
  7. Remove from the oven and let cool to room temperature. Refrigerate for at least 1 hour before serving.
  8. To serve, garnish each dessert with fresh berries, edible flowers, and mint leaves.
