- 200g dark chocolate (70% cocoa), chopped
- 100ml heavy cream
- 50g unsalted butter
- 3 large egg yolks
- 50g granulated sugar
- 1 teaspoon vanilla extract
- A pinch of sea salt
- Fresh berries, for garnish
- Edible flowers, for garnish
- Mint leaves, for garnish
Instructions
- Preheat your oven to 150°C (300°F).
- In a saucepan over low heat, combine the chopped dark chocolate, heavy cream, and unsalted butter. Stir until melted and smooth.
- In a mixing bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and sea salt until well combined.
- Slowly pour the chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from cooking.
- Pour the mixture into four small ramekins and place them in a baking dish. Fill the baking dish with water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes or until set but still slightly wobbly in the center.
- Remove from the oven and let cool to room temperature. Refrigerate for at least 1 hour before serving.
- To serve, garnish each dessert with fresh berries, edible flowers, and mint leaves.
Notes
- Ensure the chocolate is of high quality for the best flavor.
- You can substitute dark chocolate with milk chocolate for a sweeter flavor.
