Fish and Potato Pierogi: 50 Minutes to Comfort Bliss

Description

Delicious fish and potato-filled dumplings that are a perfect comfort food treat.


Ingredients

  • 2 cups potatoes
  • 1 cup white fish fillets
  • 1 small onion
  • 2 tablespoons butter
  • to taste salt
  • to taste pepper
  • 3 cups flour
  • 1 eggs
  • 1/2 cup water

Instructions

  1. In a pot, boil the diced potatoes until tender. Drain and mash them.
  2. In a skillet, melt butter and sauté the chopped onion until golden. Combine with mashed potatoes and flaked fish. Season with salt and pepper.
  3. In a bowl, mix flour and salt. Create a well in the center and add the beaten egg and warm water. Mix until a dough forms.
  4. Knead the dough on a floured surface until smooth. Roll out to about 1/8 inch thickness.
  5. Cut the dough into circles using a cookie cutter or glass. Fill each circle with a spoonful of the fish and potato filling.
  6. Fold the dough over the filling and seal the edges by pressing with a fork.
  7. Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float, about 3-4 minutes.
  8. Remove with a slotted spoon and drain. Serve hot, optionally with additional sautéed onions or sour cream.
