Delicious fish and potato-filled dumplings that are a perfect comfort food treat.

- 2 cups potatoes
- 1 cup white fish fillets
- 1 small onion
- 2 tablespoons butter
- to taste salt
- to taste pepper
- 3 cups flour
- 1 eggs
- 1/2 cup water
Instructions
- In a pot, boil the diced potatoes until tender. Drain and mash them.
- In a skillet, melt butter and sauté the chopped onion until golden. Combine with mashed potatoes and flaked fish. Season with salt and pepper.
- In a bowl, mix flour and salt. Create a well in the center and add the beaten egg and warm water. Mix until a dough forms.
- Knead the dough on a floured surface until smooth. Roll out to about 1/8 inch thickness.
- Cut the dough into circles using a cookie cutter or glass. Fill each circle with a spoonful of the fish and potato filling.
- Fold the dough over the filling and seal the edges by pressing with a fork.
- Bring a large pot of salted water to a boil. Drop the pierogi in batches and cook until they float, about 3-4 minutes.
- Remove with a slotted spoon and drain. Serve hot, optionally with additional sautéed onions or sour cream.
