Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 pound white fish fillets (such as cod or tilapia), cut into chunks
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for an additional 1 minute.
  4. Pour in the vegetable broth and add diced tomatoes, bay leaf, and dried thyme. Bring to a boil.
  5. Reduce heat and let simmer for 10 minutes.
  6. Add the fish chunks to the pot and cook until the fish is opaque and flakes easily, about 5-7 minutes.
  7. Stir in fresh spinach and cook until wilted.
  8. Season with salt, pepper, and lemon juice to taste.
  9. Remove bay leaf before serving. Enjoy hot!
