- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 pound white fish fillets (such as cod or tilapia), cut into chunks
- 2 cups fresh spinach
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery; sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional 1 minute.
- Pour in the vegetable broth and add diced tomatoes, bay leaf, and dried thyme. Bring to a boil.
- Reduce heat and let simmer for 10 minutes.
- Add the fish chunks to the pot and cook until the fish is opaque and flakes easily, about 5-7 minutes.
- Stir in fresh spinach and cook until wilted.
- Season with salt, pepper, and lemon juice to taste.
- Remove bay leaf before serving. Enjoy hot!
