- 12 oz shrimp, peeled and deveined
- 8 oz pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 bell pepper, sliced
- 1 cup coconut milk
- 2 tbsp tomato paste
- 1 tbsp Jamaican jerk seasoning
- 1 tsp thyme
- 1/2 tsp allspice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat.
- Add garlic, onion, and bell pepper. Sauté for 3 minutes.
- Add shrimp and cook until pink, about 2-3 minutes.
- Stir in coconut milk, tomato paste, jerk seasoning, thyme, and allspice.
- Simmer for 5 minutes until the sauce thickens.
- Add cooked pasta and toss to coat.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.

- Adjust jerk seasoning for desired spiciness.
- Use gluten-free pasta if needed.
- Substitute shrimp with chicken for variation.
